R.O.D. #2-ham roll ups
Dave made these and we took them to Dawn's with us. They are really good to just snatch out of the fridge for a fast bite to eat. Also see the variation at the bottom with julienne Swiss cheese and ham.
Ham Roll Ups
thinly sliced good deli ham (Krakus or Krakow)
whipped cream cheese with chives
1 bunch blanched fresh asparagus
It all depends on how many you want to make so that is why I did not give any amounts on the ham and cream cheese. I think that Dave bought a couple of the larger cream cheese tubs and a pound of ham.
Blanch the asparagus and then pat dry with paper towels - set aside. Make sure they are not wet before placing in the roll up otherwise it will make the cream cheese runny. Lay the ham slice on a plate or cutting board with the narrow side close to you. Spread a small amount of the cream cheese on the slice, all the way up and down. Lay a spear of asparagus across the narrow side and then roll it up. You will probably need to trim the butt end of the spear off so it does not stick out the end of the roll up. Or if you want some to stick out both ends you can do that also. Minor thing that Dave just did on this as we are taking them to his cousin's house for a snack tonight - he went and cut the roll up in half. This way they go a little further if there is a group of people.
Many people will use pickles for this finger food but I came up with the idea of the asparagus because it is not salty. Lord knows that we do not need the extra sodium from the pickles as there already is sodium in the deli ham. I think usually you will slice the ham/pickle roll ups into about 3/4" slices but we just leave them whole and grab one or two as a fast snack from the fridge. I am not sure if you can get low fat or FF cream cheese with chives but you can make it yourself with the blocks of the low fat or FF and cream it with a little milk and add the chives.
You can do a variation on this by julienne some Swiss cheese (I just get packaged slices) and take the deli ham and roll the cheese up in it. I roll from the short end on this also. This a "protein-protein" snack. For this I do not spread cream cheese on the ham - just roll up the ham and cheese together.

Well, I guess that works for in a pinch. Actually my husband really is not supposed to even have the asparagus in larger amounts unless he has it on a regular basis and spinach is the same as he is on a blood thiner.
I was just talking with the DH while we are watching the news and I thought of fresh sweet peppers in all of the different colors.

Thanks for the info on the light cc with chives. I will look for it at Jewel. Our local ma 'n pa grocery store called Super Low only carries the basics. They lean heavily on the ethnic foods because of all the Polish, Spanish, Orientals and Caucasians in the area. We know we can always get something unique there but not in the regular foods.
