ROD Reuben Casserole

 BREADLESS REUBEN CASSEROLE


1/2 pound lean shredded corned beef
5 thick slices Reduced Fat Swiss
10 oz sauerkraut
4 tbsp fat Free Mayo
2 tbsp ketchup
1 tbsp sugar free pickle relish
2 packets Splenda

Preheat oven to 400 degrees

Use a small loaf pan (9x4?") and spray with Pam. Put in a layer of sauerkraut on bottom, sprinkle with Splenda, top with 1/2 the corned beef

Mix mayo, ketchup and relish in small bowl. Smear half the mixture on corned beef layer.

Top with two slices of swiss cheese.

Then, a layer of Kraut (sprinkle with Splenda), remaining corned beef, layer of sauerkraut, remaining dressing mixture. Top with three overlapping slices of swiss.

Cover with foil that's been sprayed with Pam. Cook 20 minutes. Remove foil, cook 10 minutes more, until cheese is bubbly and starts to brown.

Makes 8 servings-- nutrition as prepared (per serving):

103 calories
5.5 fat
4 carbs
10g protein

PoutyWe never have left over corned beef, WWWWAAAAA. I will have to go see if there are any left over at Sam's Club, they had two whole cases of them.

What I meant was two cold refridgerated cases of corned beef.

PS by the way Dave got 6 more of basically the same sized beefs. They can be frozen before opened because they are shrink wrapped.

 I bought some packages of Buddig corned beef to make this.  Quick and easy.
