R.O.D. Slow cooker corned beef and cabbage
2 stalks celery (I used about 5 stalks, some were small)
4 large carrots (I use baby carrots and lots of them)
1 medium onion cut in quarters (I added 1/2 more of a small one)
4-6 medium red potatoes quartered
1 4# corned beef brisket
12 oz bottle of stout or dark ale (I only had Miller Light in the house)
1 tbls corned beef spices or pickling spices (some meat comes with it)
1 medium head cabbage cut in 6 wedges
3 bay leafs
some recipes call for peppercorns
Place veggies except cabbage in the bottom of a slow cooker and then place the meat on top of them. Add the beer (I used a can and 1/2 due to a large slow cooker & and I am making two crock pots at the same time) then add water to just about cover the beef. Cover and cook on LOW for 8-10 hours. Remove meat and veggies from the pot and cover with foil to keep warm. Increase heat to high and cook cabbage until softened but still crispy, 20-30 minutes. I make enough for left overs and also to make a recipe that Nancy G posted last year called Breadless Reuben Casserole. Maybe she will post it again.
