healthy BAKED protein bars recipe?

I decided yesterday to try my luck at making healthy high protein low carb BAKED bars, and had assembled a lot of ingredients. I had scoured the net for recipes, and found most recipes were for no-bake bars, and finally settled on a healthy granola bar recipe and decided to tweak it to make it higher in protein, lower in carbs.. but.. even though the finished product looked good in the pan, and smelled ok.. it was TOO DRY.. like packed sawdust almost cement consistency.. and not quite sweet enough..

it was packed with slivered almonds, unsalted roasted soyanuts, peanut butter, vanilla protein powder, eggs, flax seed powder, a small amt whole wheat flour, unsweetened applesauce,
small amts of raisins, dried apricots chopped up,unsweetened coconut shreds, dried cranberry pieces, old fashioned oatmeal, and some sugar free syrup for sweetening.. but the end result was TERRIBLE..

it was hard and dry and definitely substandard. Hubby bravely tried some and we both laughingly agreed it was a good thing it was garbage day today.. what a waste!

now.. does anyone have a recipe for a BAKED hi protein low carb bar that is a little bit sweet
and full of crunchy and chewy surprises that are good for you?
I don't want nobake bars as they tend to be gooey or sticky I want something that does not
require refrigeration to hold up its consistency and is a healthy protein snack in small portions.

hoping someone can supply me with a tried and true recipe.

Well, they sure sound like they'd be good, judging by all the ingredients. Maybe they would be good dipped in tea or coffee (like healthy biscotti?), or crumbled into some yogurt...?

This is the protein bar I make all the time. 

  OTTER BARS

 Dry ingredients: (Mix in big bowl)
2 cups quick oats
1 cup Fiber Cereal (twig type)
4 scoops vanilla Whey Protein (I used Pure Protein this time)
1/4 cups  coconut
1/4 cup slivered almonds
1/4 c. toasted soy nuts
3 tbsp Sugar Free Mini Chocolate Chips
1/2 cup raisins
2/3 c. nonfat dry milk powder
1/2 cup Splenda for cooking
dash of salt
2 tbsp cinnamon
---------------------
Wet ingredients:
1cup NSA Applesauce
3 egg whites
1/3 cup  DaVinci syrup

Heat oven to 350 degrees

Mix all dry ingredients together
Mix wet ingredients thoroughly in second bowl
Pour wet into dry and mix thoroughly.
Spray 9x9' casserole with Pam. Spoon in mixture evenly.
Sprinkle top with a little cinnamon/Splenda.

Cook 15 minutes or until knife comes out clean. Unbelievably tasty and fudgy when served a little warm!

Yields 15 bars (as below):

Cals: 142
Fat: 3.7
Carbs: 19
Protein: 11.5
Fiber: 4g

Thanks for this recipe!  I can't wait to try it.  Just a couple of questions:
1.  do they have to be quick oats?
2.  what flavour syrup do you use?  I have several..

yes I use quick rolled oats.  My fave syrup to use is caramel or vanilla....I really don't enjoy raspberry at all, it makes them red and for some reason a little more soft then the others.

 how long do these keep and can u freeze them?

I freeze them all the time.  I keep them in the fridge and they don't last more than a cpl days cuz I eat them...lol

I am thinking I could eat this for my mid morning snack.

Do you think the carb count is a little high?
what about the calories, kinda high for a snack?
or am I just over cautious about the calories and carbs and need to just focus on the protein .

Ugg.. this is sometimes so confusing.

You need carbs for your brain to function. If you are getting fibre carbs mixed with protein I would say that it is a well rounded snack. I think the calories for one of these is fine for a snack, depending on what you eat the rest of the day.

I'm sure the oatmeal contributes a lot of the carbs in the count but oatmeal is a complex carb which is good for you.
