SF Banana Cake
Oh my heavens.... I had several "dead" bananas and decided to do something with them (other than tossing them lol). WOW.
1 cup flour
1 cup quinoa flour
1 tsp baking soda
1/4 tsp salt
1 small glug of sf Cinnamon syrup
1/2 cup low fat margarine
1/2 cup chopped pecans
2 eggs
3/4 cup Splenda brown sugar
1/4 cup (almost) granulated Splenda
4 large brown mashed bananas
1 tsp vanilla
Mix flours, baking soda and salt in a large bowl. In another bowl, mix syrup, margarine, pecans, eggs, brown sugar and sugar (sf of course). Add vanilla and mashed bananas to dry ingredients, mix until moist, but don't over-mix.
Pour into a deep dish cake pan, sprayed with Pam. Bake at 350 degrees for 60-65 minutes. Yum and WOW - what a treat!

I'm going to have to put it away, April - too yummy. LOL Joe and Jesse have certainly been enjoying it, despite it being sugar free. Hey, what they don't know won't hurt 'em. LOL
