I make a banana bread with similar ingriedents but I substitute unsweetened applesauce instead of margarine.  Comes out very moist.

this sounds great, but i was wondering how you like the splenda?
I've tried to make this twice and each time the spenlda made me feel sick.
do you think i could switch that out with apple sauce and still get a good cake?

I haven't had a problem with the granulated Splenda, but you could cut it down to half, cut out the margerine and use applesauce instead.
