Afternoon all :)

Busy morning with a trip to Costco, Dr appointment, and then work.  Makes for a short work day though! lol

B - coffee with milk x 2, protein shake
S - nuttin', was out
L - 1/2 egg salad sandwich, small green salad with a little Italian dressing
S - coffee with milk, 1 small slice SF banana cake
D - crab/shrimp stuffed portobello mushroom (OMG these are so good!! And filling!)
S - not sure yet - maybe another 1/2 mushroom

omg that portobello sounds good.

B - 1 egg, 1 egg white scrambled
S - yogurt with 2 T all bran buds
   - 4 prunes (trying to keep things moving...omg)
L - my home made chicken soup (more like a stew, actually, hardly any broth in it. yumm)
    - 8  baked lentil crisps
S - yogurt with all bran again (moving moving moving.. i hope)
D - likely some soup, or peanut butter on whole grain toast,

S - an apple

I was up early to bring my mom into town, going to yoga after work, then choir. Hence the peanut butter on toast for supper lol.

So good, I can't even talk about them without wanting one NOW.

Crab and Shrimp Stuffed Portobello Mushrooms

Preheat oven to 350 degrees.

2 cans crab
1 can ****tail sized shrimp
3/4 cup cream cheese (warmed to room temp)
1 bunch green onions, mostly tops
1 bunch chives
1 tsp salt
1 tsp pepper
3 cloves garlic
shot or two of Frank's hot sauce
1/3 cup fresh shredded Parmesan cheese
1/2 cup bread crumbs
cooking spray (preferably butter flavoured)

Spray baking sheet with Pam.  Wash mushrooms and scoop out (with a spoon) membranes.  In a large bowl mix crab, shrimp, cheese, cream cheese, onions, chives, garlic, salt, pepper, Frank's.  Scoop into mushroom caps.  Top with a sprinkle of bread crumbs and spray with butter flavoured Pam over the top.

Bake in oven for 30 minutes.  Broil for 3 minutes to brown topping.

I think I'm making stuffed mushrooms for dinner.  I didnt get around to doing that on the weekend but now...I'm thinking these will be okay for dinner and lunch tomorrow.   I make mine without the shrimp.  Other than that, my recipe is almost identical :)

It was you mentioning them that got me to craving! 
I was going to use lobster instead of shrimp, but damned if I could find a can anywhere and I certainly wasn't going to buy a whoie lobster. lol

 I'm not a big portobello fan, but man do these sound good!  I'm sure any mushroom would work, or maybe I will try  portobello again.  Do you use the bread crumbs or sub in some oatmeat or something like that?

I am definitely going to try this soon, thanks!
