What are you eating/doing today? (Wednesday)

I'm back home so can finally eat what I really want instead of being at the mercy of what others are serving us.  I'm cooking a turkey either today or tomorrow.  It may already be thawed, will have to check that out shortly so I know what is for dinner tonight.


B - ham and eggs, pass on the carby stuff

S - protein shake

L - black bean soup, 1 oz old cheddar

S - cutie oranges, almond milk latte

D - maybe turkey dinner if it's thawed and if not then pork chops with veggies and salad

Hmmmm Tracey - "Black Bean soup" ??? Never had that but it sounds like something I should be looking into.

Tried something new this morning - not sure if it was a good idea or not.

B - 1 buttermilk pancake w sliced banana and SF strawberry syrup
S - LAAAAARGE coffee (half-caff)
L - leftover moussaka
S - probably nothing
D - sushi & sashimi out with friends
must drink lots tonight, was dehydrated yesterday

I love it Gaby.  I lived on it when I did pureed.   I believe I posted the recipe on our recipe forum either in pureed ideas or the soup thread.  It's easy to make and it makes a lot and I freeze it in 1 cup portions so easy to take out for lunch.

Morning all!

Claire I see how happy you are re losing 3 pounds over Christmas....that is just great.....WLS also helps so much when you are several years post surgery.....I gained 1.5 pounds in the month of December.....including going to Florida....and pretty much had the treats I wanted....but the size of my  pouch ensures I don't go too crazy......also have already lost the 1.5 in the past 3 days of proper eating....gotta love WLS....( I should also add that I have kept up my exercise and appointments with the trainer.....so important to keep the body moving)

Working today - then going to see Tinker Tailor Soldier Spy....then home for dinner - then a walk in the cold stopping for a coffee at coffee culture.....perfect day planned

B - protein shake

s - greek yogurt

l - ham and pea soup

s - yogurt with berries and granola

d - salad with turkey

s - triscuits and cheese - 4 or 5

All water....and then some....plus all vits

Feel so much better now that I am in better control of my eating and planning

Hi Barb,

Yes, they are and they're incredibly delicious!  I've never frozen them - not sure how that would work out actually. Maybe I'll try freezing one and find out. lol  Here's the recipe.  I actually use a whole brick of cream cheese lately.

Crab and Shrimp Stuffed Portobello Mushrooms

Preheat oven to 350 degrees.

2 cans crab
1 can ****tail sized shrimp
3/4 cup cream cheese (warmed to room temp)
1 bunch green onions, mostly tops
1 bunch chives
1 tsp salt
1 tsp pepper
3 cloves garlic
shot or two of Frank's hot sauce
1/3 cup fresh shredded Parmesan cheese
1/2 cup bread crumbs or Panko
cooking spray (preferably butter flavoured)

Spray baking sheet with Pam. Wash mushrooms and scoop out (with a spoon) membranes. In a large bowl mix crab, shrimp, cheese, cream cheese, onions, chives, garlic, salt, pepper, Frank's. Scoop into mushroom caps. Top with a sprinkle of bread crumbs and spray with butter flavoured Pam over the top.

Bake in oven for 30 minutes. Broil for 3 minutes to brown topping.

Freezing will change the consistency/texture of the mushrooms - it'll make them rubbery and watery.  You can freeze the filling without any negative effects.

They sound wonderful....looks like you would have to eat them steady for a few days to finish up the recipe...I agree re the freezing

I copied and pasted. LOL  No typing it out.

I get cravings for them, so I have no problem eating them eating them a couple of meals a day for a few days. They keep in the fridge well.
