So glad you are enjoying your new work. I agree- HOOOORAY 4 Friday!!! Today started out as a really crappy day. Woke up late, late to work, didn't eat breakfast and ate a muffin from the caf. instead. Horrible I choice, I know, but there was little else besides chips and candy. Then forgot the gift for my coworker who is leaving on mat leave today. I feel very flustered today!! :( Well, hopefully the rest of the day will go up from here.
B- Muffin
S- Greek Yogurt
L- insides of a chicken enchillada that I made for dinner the other night
S- cheddar and apple
D- pork and apple bake
S- protein drink

I think that's what I will do too, use a "normal" recipe..NOW< which one do I want to use?? LOL I have a few here to choose from... AHHHH! choices, choices!!
I have the "company's coming" cookbook, "muffins and more" and there is about 11/12 different recipes plus there is one on the back of the bag of bran I got yesterday.
HHHMMMMM! LOL

So, after careful consideration and reviewing my recipes, I chose to go with "6 Week Bran Muffins"
The batter can be stored in the fridge for up to 6 weeks and it was really easy to make.
Of course I didn't follow the recipe to a T but they came out great!
The recipe says:
4c bran flakes cereal (I used 4c 100% natural wheat bran, in a bag)
2c all bran cereal (I used 2c all bran 'original')
2c boiling water
1c margarine
1 1/2c sugar (I used 1 1/3c splenda)
1 1/2c brown sugar (I used 1c splenda brown sugar)
4 eggs
4c buttermilk
1/4c molasses (I did not use that)
5c all purpose flour (I used 4c all purpose flour and 1c spelt, I ran out of AP flour)
2tbsp baking soda
1tbsp baking powder
1tsp salt
2c raisins
In lg bowl, combine first 3 ingredients, set aside.
In another bowl, cream butter and sugars together. Add eggs one at a time and beat well. Mix in the buttermilk then add molasses. Stir in cereal mixture.
In another bowl, combine the dry ingredients. Mix thoroughly. Add to the wet mixture and stir to combine all together.
Store batter in refrigerator for up to 6 weeks and use as wanted.
As required, fill greased (pammed) muffin tins, 3/4 full. Bake @400f for 20-25 mins. Remove from the pan after 5mins
They smell sooo yummy!! And look great
I will eat one shortly

I feel quite guilty writing about what I'm eating today, with my mouth full of a bite from a tiny piece of gluten-free chocolate cake my co-worker brought in today...Did I say it was tiny?
Anyway, the plan:
B - the usual hot cereal w/milk
S - coffee, (and a tiny piece of cake...)
L - 3 leftover falafel patties
S - 1/4 c Greek yogurt (that's all that was left) and 1/2 tb NSA jam
D - Didn't make the ground chicken fajitas last night, but maybe tonight, or if I can't find a good price, I'll make something else in a wrap, like salmon salad (but no raw veggies for me...)
S - ChocoRite protein shake
I've been having trouble getting in 2 l. of water each day. I used to belt back half a bottle at a time, but now I have to sip slowly, of course, and not with food, of course, so last night while playing Skyrim, I invented the 'autosave drinking game'. Everytime the game autosaves, (when changing locations or when viewing the character list, etc) I have to take a sip of water.
I got a whole bottle down in 3 hours, which is a good start.
Have a great weekend.
Sharon
p.s. I should get a lot more water in this weekend, since I'll have more time to play Skyrim!
