Spagetti Squash

Hello all, prior to surgery, I was a carb addict and pasta was definitely a trigger food for me. I am 5 weeks post op, and looking to add new things into my diet. Anyone try spaghetti squash as a pasta replacement this early out? I am tolerating a variety of textures really well, and chew, chew, chew. I am tolerating a variety of cooked veggies, so I just assume squash should go ok to??

I tolerated it with no problems. I like it with Ground chicken, onions, mushrooms and tomatos. It is still one of my go to meals.

Have you thought of Miracle Noodle? They are made from extruded tofu and you just make sure you rinse the really well before heating.

My daughter and I are 6 months and 2 months out ..carbs were also our trigger food. So since surgery we have never had bread or pasta...but spagetti squash sure hits the spot.  I make a sauce with ground turkey and lots of vegs....onion, mushrooms, zucchini, celery, peppers....roast the squash ..cut side down...then use a fork to fluff it up..add the sauce along with fresh grated parmesan cheese ...put back in the oven until it bubbles...it is soooo good.....chew chew chew though!!! We love it that way!!

I love it. It is my fake spaghetti kiss...I also make  ground chicken and veggies with LF sauce for on top. I dont even bother with any cheese its good on its own...I dont eat pasta , bread or rice since i am a carb addict..That may change later in my journey , but if i do start to eat any of these foods again it will be as a treat and not part of my regular diet.  .I am almost 6 months post op..broken heart..Krista.
