"Cheeseburger Soup"
OK So this sounds like something totally off the wall - I didn't know what else to call it and this is what it smells and tastes like!
1 large onion chopped
2 cloves garlic minced
4 cups beef broth
1Tablespoon worsteschire
few springs of fresh thyme or maybe 1/4teaspoon dried
1/2 pound ground beef
salt
pepper
garlic powder
cheese
Sautee onion, garlic and thyme in olive oil until caramelized over medium heat. Add broth and worsteshire sauce - bring to a boil.
Combine beef (or chicken or turkey or pork!) with salt, pepper and garlic powder to taste. Drop marble sized pieces into boiling soup ( you could roll them like meatballs, I just pinched off small amounts and dropped them in) reduce heat and simmer for about 15-20 minutes. Taste for seasoning of salt and pepper.
Serve topped with shredded cheese - I used mozzarella.
It is kind of a cross between italian wedding soup and french onion soup! I was cold, tired and achy so this was right up my alley last night and thought it would be good for lunch today on a rainy tuesday.
