Seasoned Chicken Strips
Here is the recipe that I use, I got it from a healthy taste of home cook book. Love it, I make a big batch and freeze. I am not into creating all these carb free recipes in all honesty but I saw a frikken video on how chicken nuggets are made decided my kids were better off with these plus they love helping make them and they are higher in protein than the others so that helps me out too. These are really just a lower fat/cal version of a normal chicken strip. I have a lasagna recipe from this same book that rocks and I just pull out the pasta from my potion.
I am a fan of food with a lil kick so I make a ketchup dip for these that rocks: its just ketchup with some paprika, cyanne pepper, pepper, salt, chili powder and finely finely diced dill pickles.. Sometimes if Im in the mood Ill add a squeeze of mustard too.

1/3 cup egg substitue
1 tbsp prepared mustard
1 clove minced garlic
3/4 cup dry bread crumbs
2 tsp dried basil
1 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1 pound chicken tenderloins
1.) In a shallow bowl, combine the egg sub, mustard and garlic. In another shallow bowl, combine the breadcrumbs, basil, paprika, salt and pepper. Dip chicken in egg mixture, then roll in crumbs.
2.) Place on a baking sheet coated with cooking spray. Bake at 400 for 10 - 15 minutes or until golden brown and juices run clear
Nutritional Facts:
3oz cooked chicken equals 188 cal, 2 gm fat, 67 mg cholesterol, 525 sodium, 14 gm carb, 1 gm fiber, 30 gm protein. Diabetic exchanges: 3 very lean mean, 1 starch.
