Jenni-- I make it so easy. I just take a bunch of boiled eggs (I try not to overboil them or it won't have a nice yellow look but rather a greenish hue due to the overcooked yolks!) and mash them with a potato masher. Then when I'm satisfied that the pieces are small enough I put in some Hellman's Real Mayonaise. I tried using the lite mayo and I was using like gallons of it to get the right flavor and consistency, so I just went back to using the real stuff again and eating it in moderation. I don't add anything to it, except at the end when it's plated... sometimes I'll dust it with paprika and dill, sometimes with garlic powder and cumin. Even when it's plain it's good.

They might not forever. For me I never have a problem with eggs except the random egg salad, fried, baked, deviled, in stuff? No problem. every 6 or 8th time I eat egg salad? I get the heaves after its already passed through enough to have unsatisfactory heaves and broken blood vessels in my face.
Ah well. I rarely feel like gambling anymore with it.
But weird that deviled eggs (which are kind of the same thing!) are not an issue! *shrug*
