If your really having a hard time with cooking chicken, I would turn to in store rotisserie chicken. Costco has them HOT for $5...... break it down and freeze some portions out. Only issue is they are a little salty from a brine (I think) but probably far less sodium than frozen pre-cooked packaged chicken.
In a future Cafe Frisco posting I will be going over some of my favorite tools, one of them is a Zojirushi Indoor Electric Grill, great for chicken and most all proteins.

thanks Frisco! I will be looking into that. Every time I fix chicken breast, they are either not cooked in the center or way over cooked to get the inside cooked and dry.
I live in a small town and all we have is a Wal-mart and Kroger. They have good rotisserie chickens there. I often get the Tyson grilled and ready chicken strips.
I want to try your Thai Chicken Satay, I noticed in your recipe that it said chicken breast or ground chicken. I am not crazy, just don't know how to cook, :/ So would ground chicken be like ground turkey or ground HB meat?
