Goal Weight?
I chose my weight based on the last time I felt like I was smoking hot (seriously). I know its not scientific or anything but it was the last time I felt amazing. However as I got close to that weight, I felt that I could lose more. I'm 7 pounds below that goal. When I hit 190, I will see if I'm going to drop more!
That is probably the wrong way to go about choosing your goal weight, but my doctor didn't have a real firm number for me.....
First, wanted to get to a normal bmi. Shortly after surgery changed it to 220 pounds, thinking that was more realistic. Not too long after that, switched back to under 25 bmi realizing that I actually had a shot of making that goal. Glad I did :)

I haven't gotten near my goal, but I took my surgeon's goal and subtracted 50 pounds. I think at 170, I will look good even though I've never weighed that as an adult. My frame is big, so if I weighed even the upper end of the weight range for my height, I'd look sickly.

Like many others I started by choosing a weight that got me into normal BMI range. BMI is kind of a bogus concept, but when one is MO, it's as good as anything as a starting point.
Once you get close (maybe within 20 lbs), check your body fat % and let that be a more accurate guide to how much more you can realistically lose.
In the end we want to lose fat, not just weight... BF% is the only accurate way to judge that.

I choose my goal to be 5lbs above post baby weight. I liked my body at that range, curves for days and a booty that says " Hello Mother Africa!. However, even 20lbs away I am starting to loojk gaunt with collarbones sticking out and what not, so I have slowed it down a bit to see how it all falls out.
