Instant pot MAGIC!

We're having a "farewelcome" potluck for my department at work today. We're saying goodbye to one analyst, and welcoming her replacement, who's already been here in training for a week. I always volunteer to bring a main dish, since I have an Instant Pot, and the outgoing analyst asked if someone could bring ribs. She's a picky eater, but apparently she loves BBQ, so I took up the challenge.
I now have ribs cooking away in the IP and my office smells AMAZING. I was amazed how easy these are to make, and I thought somebody else might want to try it as well!
- Start with a rack of pork ribs. Clean them by removing the membrane from the back, if they haven't been cleaned up already.
- Pat the ribs dry with a paper towel. Rub them with your favorite spice mixture. (I got a bottle of "chicken n' ribs" seasoning at Safeway and it smells amazing!
- Put a trivet or steamer tray in the bottom of the IP. Stand the ribs upright in a circle, resting on the trivet. (You don't want them touching the bottom of the pot.)
- Add about a cup of water and half a cup of apple cider vinegar to the bottom of the pot.
- Cook on high pressure for 30 minutes.
- Once that's done, do a slow release for 10 minutes, then a quick release to vent the rest of the steam.
- Cover the ribs in your favorite BBQ sauce. I'm using Kinder's garlic BBQ sauce, but any kind will work!
- Leave the sauced ribs in the IP for a little bit so they can soak up the sauce.

I saw that way of making them and wondered how they'd turn out, I usually do mine in the slow cooker and add onions too, but keep thinking I should try them that way, the only pork I've been able to eat so far is Ribs due to slow falling apart method of cooking.

I found that I had a much easier time with pork if it was really moist. I got tubs of premade BBQ pork sandwich filling and would eat it with a spoon (no bread), and that worked really well for me.

Ribs in IP are very very good.
Sometimes instead of water I used 1 cup hard cider, or chicken or beef stock.

Great idea! I did a mix of apple cider vinegar and water, but next time I'll do it with hard cider.

OOooh, good idea. We ended up with a bunch of cider we don't actually like for drinking, but cooking with it would be awesome.
