Happy Halloween Everyone! Wanted to share a great healthy and yummy recipe I've got going on in my crock pot right now!
In the crock pot now...... My version of baked apples.
9 Organic apples (picked from my mom's neighbors orchard!)
1/2 cup organic walnuts
1/2 cup organic raisins
1/4 cup raw organic wild honey
2 tsp cinnamon
1 tsp vanilla
*for my vegan friends you can use coconut oil instead of ghee!
cover bottom of your crock pot with about 1/2" of water, core all of your apples and place in your crock pot, crush walnuts to make smaller pieces, mix nuts, raisins, honey, melted ghee (or oil) cinnamon and vanilla and divide into each apple. Sprinkle cinnamon over the tops of the stuffed apples and cook on low for about 5 hrs! Serve warm with coconut cream on top!

No weigh in for me. I slept in. My 11 month old son is sick. took him to the er last night. threw up with a vengence. won't sleep. hasn't ate or drank much in days. turns out it's just a bad strain of the flu. he's on pedialyte and, for the most part, clear liquids. the er precribed something to ease his tummy. must have helped, as he slept as good as he has in a week. i'll try to weigh in tomorrow morning, or even tonight.

I took next Monday off to hang with my babies and I have to travel 2.5 hours to the surgeons.
Since getting married and having kids my weekends have changed dramatically for the better.
