Hi Sue,

I didn't follow a recipe but this is how I made it:

I sauteed chopped onions, garlic, carrots and celery in a bit of olive oil.  Then I added 1 tbsp of chili powder, 1 heaping tsp cocoa powder, 2 tsp of Tex Mex seasoning, 1/2 tsp cumin and let that all toast up a bit.

I then added 1 cup of home made beef broth and brought it to a boil.  Once boiling I added one cup of TVP, covered, removed from heat and let that sit.

In another pot I boiled 1 cup of lentils for 20 minutes or so.

Back to the TVP pot:
I added 1 can of crushed tomatoes and 1 can of diced tomatoes.  I also had some leftover salsa kicking around which I added.

another tbsp of chili powder, another tsp of cocoa and more Tex Mex seasoning.  I brought this all to a boil and added a can of red kidney beans.

Once the lentils were cooked I added them to the chili.

Add salt to taste and simmer till it reached the consistency you like.

I served it up with some shredded cheese.  Yum!

Yes, correct.  Unsweetened cocoa - Fry's or Hershey's.  Mexican cooking includes the use of unsweetened chocolate in some dishes.  You don't taste the cocoa but it adds dimension to the flavour.

Hi,

You can find it in any health food store.  Just ask for it.  It comes in bulk or in bags. Also called (T.V.P.)

I bought some (Kardish) on merivale in front of the Zellers mall. (a few years ago).  I don't live in Ottawa anymore.  We have it in our small town.
