You cannot go wrong with chicken breasts with cheese. This is one to share with your family and friends!

INGREDIENTS


*4 skinless, boneless chicken breast halves (about 1 1/4 pounds)
*1/4 cup crumbled feta cheese (I used the sundried tomato basil flavour)
*2 tablespoons softened cream cheese
*1-2 tbsp. sundried tomatoes from the jar, patted dry of the oil, and chopped up
*1/2 teaspoon dried basil, crushed (I also added 1 tsp or more of the Clubhouse Greek seasoning)
*1/2 teaspoon ground black pepper
*1 teaspoon olive oil

DIRECTIONS

1. Preheat oven to 350°F.

2. Place tomatoes in a small bowl. Cover with boiling water. After 10 minutes, drain and pat dry before set aside.

3. Using a sharp knife, cut a pocket in each chicken breast by cutting horizontally through the thickest portion to create a wedge opening. Set aside. (I only had 2 chicken breasts so I cut them in half and pounded them flat between 2 pieces of wax paper,  with the side of a kitchen mallot.  I had 4 portions.)

4. In a small bowl, combine feta, cream cheese, basil, and tomatoes. (I also added spinach and pimentos to this mixture.  I would also probably double this part to make extra stuffing since I made 4 portions).   Spoon about 1 rounded tablespoon into each chicken pocket. If necessary, secure openings with wooden toothpicks.  (I added my stuffing ontop of my flattened chicken breasts, and then folded the breast in half and secured with thick toothpicks)

5. Sprinkle chicken with salt and pepper.

6. In a large oven-proof skillet, heat oil over medium-high heat. Add chicken, coo****il browned, flip over, and cook on second side until browned. (near the end of my browning, I added a bit of dry cooking sherry and basted the breasts with the liquid...mmmmmm....love the smell of wine cooking on the stove)

7. Move skillet to the preheated oven and bake until chicken is thoroughly cooked. This usually takes around 25 minutes.  (more like 15-20 minutes if you prepare the chicken like I did, since they are thin)
