Morning all,

Busy weekend, didn't even check my email. Working today then a few errands, supper and BED.  Didn't sleep last night, damned insomnia. Ooooh, and I get the whole bed to myself and no snorer as Joe's in Ottawa working for a few days. lol

B - coffee with milk x several, protein shake
S - watermelon chunks, 21g cheddar, 2 crackers
L - turkey stew that we made yesterday - yum!
S - more coffee, watermelon, 21g cheddar, 2 more crackers
D - turkey stew

Have a good one!

No - it's just plain old leftover Thanksgiving turkey stew and veggies. lol

Boil the carcass for a couple of hours with a large chopped onion, a few stalks of celery, a couple of chopped carrots, salt and pepper.  Then strain it so you just have the broth left.  Add potatoes, turnips, carrots, onions, celery, peas.... whatever veggies you want.  Let that boil a while and then add in the leftover cut up turkey.  Simmer for a few hours and "tada!" - soup.  If you want to thicken it, you can make a thin roux with a little flour/water or cornstarch/water.  I didn't have to thicken it, it thickened on it's own from the potatoes and it was very dense with veggies and turkey too.

The best part is that the turkey was stuffed with my stuffing, so the wonderful flavour of sage was cooked into the stew.

Sue you get a better flavour from thighs than from breasts.  I usually brown my thighs then boil the crap out them with onions, celery, parsley and then I strain it.  Put in fridge and skim fat off the top once it's cold then start with the broth and put fresh veggies in and use the boiled thighs in the stew.

Ewww I will pass on that one.  Tomatoes do not belong in chicken stew.

Home today. Didn't want to risk getting tangled up with the Occupy Toronto people. It'll give me a chance to exercise again. I've really been slacking off since I went back to work. I need to get back into a routine again.

On the menu today:

B : Protein Shake
L & D : Shrimp (3oz each meal)
S : Grok Cheese Snacks & Melon
