So do I. LOL
I found this old post from 2009 where she posted her recipe but I know she said she adds 3 colors of peppers these days and I think she may even throw in other stuff. Let's keep talking about her til she goes and posts the 2012 version of her salad.
6 - 8 roma tomatoes
1 vidalia onion
1 or 2 any color pepper - I like green and red
Feta - low fat - fat free - full fat - I have used them all
Good quality salad dressing - I use Paul Newmans Italian or oil and vinegar or Kraft feta and herbs
Take the ends off the Roma's and cut in half - I run the knife around the inside to remove the seeds and the pulp- discard this - then chop the meaty tomato part
Add 1/2 chopped vidalia onion- or more to taste
Add one or two chopped peppers - I add two for vitamins
Add LOTS of feta
Maybe 1 or two tablespoons of salad dressing - you can always add more later -
lots of pepper
Mix it all up and refridgerate - gets better every day. My husband is also addicted to it

Oh yes, let's do. Damn, I'm making this salad tomorrow. I have a huge pile of peppers in the fridge from when they were on sale the other day.

I make my own dressing one third olive oil, two thirds wine vinegar (red or white) lots of black pepper and a teaspoon of dried oregano. Place in a jar and shake.

I put cuke in mine but Barb doesn't as she isn't fond of cukes in salads. I made a homemade greek salad dressing for mine with lemon juice, EVOO, oregano, red wine vinegar. This was her 2009 version and I know she makes it slightly different these days.

Okay feedback time. LOL
I moved it to the Breakfast ideas thread We just try to keep similar things all together so people can open a thread and have all similar recipes as in beef, pork, breakfast, you get the idea.
As for the actual recipe, it's not horrible but not something I'd eat very often. it's very carb laden but at least it's coming from oats and carrots. I would not use the cream cheese thing that is optional as that would add way too many calories.

I knew the first time I posted I would screw it up LOL.. I would do without the cream cheese on top too... they just look so yummy. Would be a nice thing to serve if you have family or company from out of town staying over or something
