Honestly, if you're never had an "egg bite" aka crustless quiche, then you are totally missing out.  I make mine in all sizes from mini to regular to mega, and put all of my own ingredients in.  Whatever I feel like.  The BASE recipe, however, is listed here on Eggface's site.  Genious!

Here are two of my favourites to get you started - let your imagination go!

Kitchen Sink Egg Bites

Why "kitchen sink"? The old expression - everything in it but the kitchen sink aka. clean out the fridge day.

Preheat oven to 350 degrees.

1/2 cup chopped ham
1/2 cup chopped bacon
1 yellow onion
1/2 cup chopped green onion
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/2 cup finely chopped mushrooms
5 eggs
1/2 cup old cheddar, shredded
1/2 cup any other cheese you have, shredded
1/2 tsp. salt
generous shake of pepper
splash of Frank's Hot Sauce
small dash of caynenne pepper

Sautee ham, bacon, onion, green onion, green and red peppers and mushrooms in a frying pan sprayed with PAM until semi-browned. Set aside and let cool.

Once cool, place in a large bowl. Add all other ingredients and mix well. Spoon into PAM sprayed mini muffin tins. Bake at 350 for 25-30 minutes. Allow to cool in the tin for 5 minutes, then just "pop" them out of the tin onto a wire rack.

Makes approximately 24 mini bites.


Mexican Mega-Bites

6 eggs
1 yellow onion, diced
4 green onions, sliced small
1 cup peppers, diced (I used some green, red and yellow in mine)
a few jarred jalepeno peppers, minced
3/4 pound lean ground beef
1 pkg. taco seasoning mix
1/2 tsp salt
1 tsp black pepper
generous splashes of Frank's Hot Sauce
1 cup shredded old cheddar

Brown the ground beef and vegetables in a little olive oil. Once beef is browned and vegetables are soft, add taco seasoning package and 1 cup of water. Continue to simmer for 10 minutes until thickened. Remove from heat and allow mixture to cool.

Mix eggs, cheese, salt, pepper and Frank's in a large bowl. Add meat/veggie mixture and stir well. Scoop into gigantic muffin tin (this recipe will make 6 mega bites) that has been sprayed with Pam.

Bake at 350 degrees for 35-40 minutes. Remove from oven and allow to sit for 5-10 minutes and then just pop the bites out of the tin onto a wire rack for cooling. Serve with a small side salad and some salsa.

Thanks Karen!  I am going to try these to, I love the muffin tray's idea perfect serving size...I don't have mini ones but I'll just put less into the normal sized ones...I love trying new things now....
