 They freeze really great. 

I make these for the kids all the time..sadly my pouch does not like eggs at all..I used to tolerate eggs so-so.. Now not at all :(

I agree with you about the versatility & great taste of crustless mini-quiche - yum!  I would love to have your recipe for Quinoa Banana bread as I'm trying to learn to cook with things like grains, beans, lentils, etc.  Thanks a bunch, kiddo!
