18 months post RNY ( and recently internal petersen's hernia surgery)

Good morning!

Well not doing too much today. Recuperating at my mom's.(then I'm not tempted do do any house work) I'm hoping to go back to work on Monday.
Feeling much better today since my surgery Monday evening. All functions are working well and introducing food slowly.

Mom's cooking day:

B - 1/2 c Greek yogurt with tbs of maple syrup
Water and vitamins
L- 1 c of homemade fish soup with quinoa
Water and 2 tbs of milk of magnesia( this is nasty stuff but it works)
D- more soup and 1/2 Greek yogurt w/ maple syrup for desert
Water and the rest of vitamins

My mom made it without a recipe. That's how we do a lot of our cooking...

Here's what she did:

2 large garlic cloves chopped
2 tablespoons extra virgin olive oil
1 large onion, chopped
1 celery rib, chopped
2 medium carrots, chopped
1 pound small new potatoes, scrubbed and quartered
A cuople of bay leaves, a couple of sprigs of thyme and parsley, tied together with a string
1 to 1 1/2 pounds fish (cubed) she used salmon (any white fish will be good for this too)
Sea Salt and pepper to taste

1 cups quinoa
1 tbsp olive oil

Heat the olive oil over medium heat in a large, heavy soup pot and add the onion, celery and carrot. Cook, stirring, until the onion are translucent. Add 3 cups of broth or water and add to the pot with potatoes and the bouquet garni. Bring to a simmer. Turn the heat to low, cover partially and simmer 30 minutes. Taste, adjust salt and add pepper to taste. Remove the bouquet garni.

Add the quinoa and olive oil to the pot, Add 1 cups of water, raise the heat to high and let the soup come to a boil, stirring occasionally. When the soup has started to boil, lower the heat to medium-low and cover the pot. The quinoa should only take about 15 minutes to cook.

Season the fish with salt and pepper, and stir into the soup. The soup should not be boiling. Simmer five to 10 minutes (depending on the thickness of the fillets) or just until it flakes easily when poked. Remove from the heat, toss in chopped parsley and serve . You could use precooked fish as well.

Time to be accountable.

Breakfast - protein shake with 1/4 banana

s - Turkey pepperette

l- hard boiled egg, yogurt, 1/2 apple

s - turkey pepperette, cheese string

d- 1/4 chicken breast with 1/2 roasted potato

s - likely pepperette or yogurt
