They are SO easy to make... buy a can of chick peas (where you buy kidney beans in the grocery store), drain and rinse them, drizzle some olive oil and roast in the oven on parchment paper for a good 40 minutes to an hour rolling them around often! You can season them with things like salt and pepper, chili powder, curry powder, cinnamon, etc... any flavour you like! Popcorn seasonings work well on them, too. Some season them post roast, I season them lighty pre roasting and add a bit more post roasting

At what stage can you eat these?

I think I started eating them sometime in the latter part of the soft food stage - I was just sure to chew them well before swallowing.  When you chew them, they break down well, so I didn't have any problem.

I echo the advice to be careful of portion sizes, though.  If you have a scale, what I usually limit it to is an ounce per day.  The carbs can add up otherwise.  But they are nice and crunchy, and definitely worth it to me to be able to have a crunchy snack that I don't have the urge to binge on.

I should try making them myself sometime.  I'd like to try doing roasted green peas too.  They also have some protein in them, I think.  (At least, the packaged ones say they do.)  But I've been lazy and buying them in the package.  They last me a long time since never eat more than an ounce per day.

Salt & vinegar popcorn seasoning rocks! Just make sure you make "portions" or you can eat too many.
