Doing all the homework that we got told to do when we went to orientation on mon nov 25/2013
reading all food labels
Started my food journal and trying very hard to eat 3 meals a day
checked to make sure my medication can be in liquid or I can be crushed
got my measuring cups and measuring spoon and my scales also got my 3 portion plates
Now just waiting to hear about appointment dates and then meet the surgeon

You are already on the right track. Make sure you also track your water, and activity. One thing you might want to start to track as well is your measurements. It will help when the scale lies to you, and you don't think you are doing well. And take a "before" picture now, and just before Opti, and just before surgery (if you want to) just to watch your progress.
You sound like you're ready to rock this.
