Colour me confused........

If we eat too much, we vomit.  So if we do this how does the tummy stretch?  It was a thought I had the other night.

You will not vomit all of it. Also from what I have read it is hard to stretch a stomach but not impossible.

Not everyone vomits (and not all of it, as Pat mentioned) with overeating. I am unclear whether you are asking about the sleeved stomach or the RNY pouch in your question. With RNY, it is most concerning to stretch out the stoma, allowing food to more quickly pass through to the intestine and in larger quantities. With the VSG, it is entirely possible to stretch the stomach with over eating, as the sleeve will naturally stretch anyway (normal) over time.
