OT.....I need a good sweet potato recipe...

Okay everyone.....I need a good sweet potato recipe fast!

I have to bring sweet potatoes to a dinner I am going to and I want it to be good!!! This is with Dwaynes family....who I will be meeting for the first time.

Help....help....help!!!

hi connie!!

here is one i had saved from long time ago....

SWEET POTATO CASSEROLE

5 large sweet potatoes, cooked or 60 ounce can drained

2 1/2 cups butter, melted (divided use)

1 cup sugar

2 eggs beaten

1 teaspoon vanilla

1 cup shredded coconut

1 cup packed brown sugar

1 cup pecans chopped

2 tablespoons flour

lightly rub a 9X13 inch casserole dish with butter. preheat oven to 300 degrees.

in large mixing bowl, mash sweet potatoes. add 1 1/2 cups melted butter, sugar, eggs and vanilla. beat until smooth. pour into prepared casserole dish.

in medium bowl, mix coconut, brown sugar, remaining melted butter, pecans and flour to make topping. spread over sweet potatoes and bake for 20 to 30 minutes or until topping is brown. makes 12 servings.

been so long ago i am not sure how its tastes but if i saved this recipe it must have been good...LOL

I'd like to try this with Splenda as both of my brothers are diabetic. Suggestions for how much white and brown Splenda to use?

when using the brown sugar splenda use half of what the recipe calls for, say 1 cup = 1/2 cup, etc...

no, splenda measures the same as sugar, only the brown sugar you cut in half.....

Thanks. I prefer the chunks of yams or sweet potatoes to the mashed so think I'll give this one a try.
