OT.....I need a good sweet potato recipe...
The one Susan Does Hair posted the other day sound incredible...Souhwestern Sweet Potatoes....
2 lg sweet potatoes, cubed, about 4 cups
Steam them for 20 minutes or until soft, not mushy
Add 2 Tbs butter and 1/2 tsp salt
Mash well, but not to the point where it's "wall paper paste" per Alton.
chop one chipolte pepper, add to potatoes with 1 tsp(or more to taste) and stir to blend.

Kinda late for this but I make a really simple dish that everyone likes. 4 medium sweet potatos peeled and cut into large bite size chunks (about 2 inches). As long as the chunks are all the same size so they cook evenly cut them as large or small as you want. Mix 1 cup brown sugar with 1 stick melted butter. Toss sweet potato chunks in sugar/butter mixture. Spread out on cookie sheet. Sprinkle with salt and pepper and cook in the oven on 400 degrees for about 20-30 minutes or until fork tender. Simple, easy to reheat and very good. Sweet potatos and yams are a very hard vegetable like an acorn squash and they are kind of hard to peel and cut so make sure you have a sharp knife and you shouldn't have a problem.
