Hi Brenda...so good to see you back once more. You were missed!!

Crockpot Black Bean Chili

1 lb. pork tenderloin (cut into one inch chunks)
16 oz. jar thick chunky salsa
3-15 oz. cans black beans, rinsed and drained
1/2 c. chicken broth
1 medium red bell pepper, chopped
1 medium onion, chopped
1 tsp. ground cumin
2-3 tsp. chili powder
1- 1 1/2 tsp. dried oregano
1/4 c. sour cream

1. Combine all ingredients except sour cream in crockpot
2. Cover. Cook on low 6-8 hours or until pork is tender.
3. Garnish each  serving with sour cream.

For those of you that can eat rice this is (was) good over brown rice.

I have made this with beef and used beef broth also.

Black Bean, Chicken and Cheese Bake


 


Servings: 4

ingredients 1 package (11-oz.) Classic Recipes Welsh Rarebit, defrosted according to package directions
1 can (4-oz.) ORTEGA Diced Green Chiles, drained
1/4 cup milk
1 teaspoon chili powder
8 ounces macaroni, prepared according to pkg. directions
1 cup shredded cooked chicken
1 can (15-oz.) black beans, rinsed and drained
1/2 cup crushed corn chips
1/2 cup shredded cheddar cheese
 
directions PREHEAT oven to 350° F. Lightly grease 2-quart baking dish.

COMBINE Welsh rare*****iles, milk and chili powder in medium bowl. Add pasta, chicken and black beans. Transfer to prepared baking dish; cover.

BAKE for 25 minutes. Uncover; sprinkle with chips and cheese. Bake for an additional 5 to 10 minutes or until cheese is melted.

for who dont know welsh rarebit is or can not find it like me this is what i use leave out the beer if you want to

Directions

    Melt butter in top of double boiler.

    Add flour and dry mustard and mix.

    Gradually add milk, stirring until mixture thickens.

    Slowly add cheese and stir until melted.

    Add beer, stir and serve.

stouffers  makes a frozen welsh rarebit..yum!!!

                                                      black bean brownies



 

15 ounce can black beans
4 large eggs
1/2 C. Splenda
3 Tbsp. coco powder
2 Tbsp. strong coffee
1 tsp. baking powder
2 Tbsp. olive oil
1 tsp. vanilla


 

Preheat oven to 350*F.
Prepare an 8x8 baking pan by spraying it with cooking spray.
Mix all ingredients in a food processor or blender.
Add the beans last and make sure you blend VERY well.
Bake for 30 minutes, or until toothpick comes out clean. Allow to cool before slicing.
Brownies are approx. 2"x2" in size.


Number of Servings: 16

I think something was left off this recipe....like flour maybe?????  I tried them and threw them away....they were awful.  Could you check your recipe, please???

THESE CAME FROM ONE OF MY WEIGH****CHERS RECIPES.I DONT KNOW WHY THEY DIDNT COME OUT RIGHT.IT HAS BEEN SOME TIMES SINCE I MADE THEM.I WILL TRY THEM AGAIN AND SEE HOW THEY COME OUT THIS TIME.SORRY.I DO HAVE SOME OTHERS THAT YOU TSKE NO PRUDGE BROWNIR MIX AND BLACK BEANS MIX TOGETHER.BUT I DID LIKE THE OTHER WILL TRY THEM AGAIN.

Thanks Marylyn, I have the weigh****cher recipe ..... that wasn't the one that didn't come out right.....it was one you posted just above my response.....with cocoa pwd, hot coffee, etc......thanks anyway, think I'll try the WW one if I can find "low fat" brownie mix!
