Hello all! Our Mouthwatering Monday resumes today so let's check out our recipe boxes and share our recipe for the day. Remember just one recipe for each person so we can reuse the same subject again.

The topic for this week is wls friendly dinners. What do you fix that is special to you and your family. I know that most of the recipes that Bill likes the most are wls friendly and he doesn't even think about it.

So let's get out our recipe boxes and jot something down.

Hi Brenda, Hope you are healing well...I am.  I just had a thought because I am back to the original food regime.  If you ever do make an OFF cookbook, there could be suggestions for Phase I:  Clear liquids; Phase II:  Not so clear liquids; Phase III:  Mushy stuff.  I am sure that our OFF brothers and sisters have come up with some never thought of before combinations that might be nice for variety and still stick with the required foods.  My current favorite on Phase I is to warm up some clear broth (beef, veggie, chicken or a combo) and mix in one scoop of unflavored Unjury.  It is a break from the fruity protein drinks.  Love and hugs to you.  Diane

I like the idea of having recipes for all phases.  That would be handy for all of us.  For example, even if I can eat most foods, there are times I need earlier phases to calm my tummy down.

LO-CAL BAKED CHICKEN

1 frying chicken cut up

1 can about 16 oz tomatoes

1 envelope au jus gravy mix

1/4 cup chopped celery

1 can 3-4 oz mushrooms undrained

remove skin from chicken, arrange meaty side up in shallow pan. break up tomatoes, combine with gravy mix celery and mushrooms. spoon over chicken. bake at 375* for 50-60 minutes or until tender.

I cook for just me, so anything's game.  Just wanted to say that I think the cookbook is a great idea!  You do it, Brenda, I'll buy it.

Hi Brenda...glad this time it worked!!

Low-Cal Chicken With Cashews Stir-Fry

1 pound chicken breast, cut into 1 inch strips
1-14 oz. fresh stir-fry vegetables
1/2 c. chicken broth
2 T. lite soy sauce
2 T. cornstarch
2 T. cooking/olive oil
1  clove garlic

Stir together chicken broth and soy sauceinto cornstarch; set aside. In a Wok/ skillet, heat oil over high heat. Add garlic clov, stri-fry until brown and remove.Add chicken and stir-fry for 4 to 5 minutes until crisp and tender. Stir in broth mixture; cook and stir until bubbly and thichened. Stir in cashews.

This can be served over rice. I just eat it plain.

Meat loaf

1 small onion, diced
1 bell pepper, diced up
2 tbsp minced garlic
2 lb ground turkey
1 cup bread crumbs
2 eggs
salt and pepper to taste
3/4  cup shredded cheese
Tomato sauce

 

 

In mixing bowl, combine all ingredients except cheese.  Form into 2 equal portions.  Place one portion in slow-cooking pot.  Put shredded cheese over the layer.  Place other portion of meat mixture on top.  Put enough tomato sauce on top of meat to cover.  Cover and cook on low for 6 to 8 hours or until done.
