Jan,

I tried to post a response to your list of good foods but it wouldn't format correctly.  I love list like this because it reinforces that the foods that I am eating are good for me.  I eat at least a half of an apple a day.  And, I include mushrooms at least five or more times a week.  I don't think there are any of the vegetables or fruits that I'm not good at eating.  In fact, night before last, my evening meal was a fresh fruit salad topped with a peanut butter dressing.  It was so good and I sprinkled minced nuts on the top and think it was as good as any meal that I'd had in a while.  I'm still making those peanut butter and protein powder cookies except I bake mine.  They are my only dessert.

how do you make your pb dressing???

I get up every morning determined to both change the world and have one hell of a good time. Sometimes this makes planning my day difficult.

I mix peanut butter and splenda  together and either use a little olive oil or I use one of those devinci mixes or a little balsamic vinegar.  Sometimes I just use the peanut butter heated and poured over the fruit but it's better mixed with something that will thin it out like balsalmic or red wine vinegar. 

BTW, I really like your new picture.  When did you get so damn cute.

I, too, love peanut butter and use it for so many different things.  It's really my main protein source on most days.  When I make the dressing, I heat the peanut butter a little and drizzle either the balsamic or the red wine or the olive oil in and stir until blended and then add the splenda.  If you put the splenda in too soon, it clumps.  Then, I just pour it down over the frut and it coats it nicely or I use it for a dip.
