What's Happening Wednesday?

My knees have been aching since starting the daily rowing. I asked the man at the sports place to give me some pointers. He said I was pushing with the balls of my feet which has caused knee pain. The correct method is to push off with the heels, that exercises the muscles at the back of the leg instead of putting pressureon the knees knees. The hand aches are from good old arthritis. Other than that my method is correct.

might as well go somewhere with all that rowing lol
i have been doing the same ole thing, pulling weeds and watching flowers grow lol
this year i have a big veggie garden too , first time for that . Yesterday i got about a half bushel of squash out of it. and everything else is getting so nice. wish i had someone to share eating all this lovely lettuce we have. it is beautiful and just keeps growing.
we are going to my daughters this week end so i will be taking her some squash and some lettuce lol my neighbor has a recipe for zuchinni chow chow that you use splenda in and it is great. so i know what i will be doing with some of that. anyone else have any good idea for zuchinni? i intend to freeze a lot of it and can make breads and such with it i know after that dont know.

Jan, Can't put my hand on them right now but I have a good zucchini lasagna recipe and also a couple of casseroles that we like. I'll dig them out and send them after I get back from Maui. We bought regular head lettuce at a farmer's market the last time we were in Maui (actually the only time!). It was so wonderfully fresh that it lasted us all week for sandwiches. So crisp and it didn't smell like rust!

Jan, I like to eat the squash raw. I gut the seeds out and wash them really good and dice into small pieces and drop right into my salads. My ex-son-in-law always loads us down with fresh vegetables and more squash and okra than we can eat, so I freeze mine too. I slice them into pretty good slices and individually freeze them on cookie sheets and when they are frozen, put them in baggies. Then, I can take however many I need out and rinse in cool water and bread if I"m frying or not if I'm steaming and cook away. (My husband likes his fried, and I like mine steamed so I do both ways for one meal). Also, they are good stuffed with a little of whatever you want to stuff them with. I use Italian seasoned bread crumbs, a little parmessean cheese, some tomato diced small, and olive oil. Mix those together and after you make a trench in your squash, pack it in and bake. You can make them with meat too, like sausage or ground beef. You can flavor the meat to be plain or Mexican flavored with taco seasoning, or Italian seasoned. The more you stuff, the bigger the trench. I also stuff the tomatoes and bell peppers.

jan-wish i were there- we won't be doing any veggies this year-have one tomato plant- a patio one...

My time is winding down in Denver. I leave on sunday to go back to Chicago for the OH event. I am working the clothing exchange there. Ill be back in chicago for about 5 days then going to see Phyllis Gilbert then to Nans.
My husband is flying in on the 29th of June.
