The new recipe that I tried and liked......

The other day I had hamburger and didn't know what to do with it. I found this recipe and we liked it. I changed it some but I like doing that. I guess that is what makes them your recipes after all. Linda wanted me to share it and so here it is. I will write it the way that it is suppose to be and then let you know what was changed. I know that the hamburger adds protein to it so the count on that is upped...which is always good.

Impossibly Simple Southwestern Pie

prep time: 15 min.  bake time: 40 min. cool time: 5 min.

1 and 1/2 c frozen whole kernel corn
8 med. green onions, chopped
1-15 oz. can black beans, drained and rinsed
1/3 c shredded cheddar cheese
1/2 c original Bisquick
1/2 c milk
1/2 c thick and chunky salsa
2 eggs
additional thick and chunky salsa

Heat oven to 400*. Grease a 9" pie plate. Layer corn, onions and black beans in the pie plate. Sprinkle with cheese.
Stir Bisquick with the milk, the 1/2 c salsa and eggs until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in the center comes out clean. Cool 5 minutes and serve with more salsa if desired.
Makes 6 servings.
High altitude increase Bisquick to 2/3 c and bake 40-45 minutes.
Substitution: if you don't have black beans use another kind of canned beans, such as pinto or great northern.

Cal.: 220, Cal from fat: 55 Fat: 6 grams (sat fat: 3 g Cholesterol: 80 mg. Sodium: 540 mg. Potassium 480 mg. Carbs: 36 g Dietary fiber: 7 g. Protein: 13 g.
Diet exchanges: 2 starch, I very lean meat, 1 veg.

What I did was make this in a 8x8 dish and added 1# of ground round along with a package of taco seasoning in it. I didn't use green onions I just used a plain old onion. A mixed everything in with the hamburger and then tossed it in the dish and put cheese on top. I used Mexican blend cheese instead of cheddar and then I put the Bisquick mixture over the top. I baked it for about 45 minutes and it was done.

I found that a bit of it goes a long way since it is so dense. It was good and Bill liked it...around here if he likes it the thing must be good.

I hope that you enjoy it if you try it and if you do changes please let us know what you did for additional ideas.

Thanks Brenda...This recipe sounds pretty good.  It sounds familiar...I may have made something like this years ago when my kids were still around.  I love salsa, black beans  and all that stuff so I think I'll try it.  Have a wonderful weekend.

when my kids were growing up we did alot of the "impossible pies" ...yummo...i can imagine it would be filling....

I get up every morning determined to both change the world and have one hell of a good time. Sometimes this makes planning my day difficult.

Brenda!! Thank you so much,I love your version best,and wow is it chock full of protein and economical,it will feed me,Liv and the boys!!
I too will use the white onion I have in the fridge,and will use yellow cornmeal instead of bisquit,making it more southwestern,and no white flour,but that is just a personal choice,I love corn and tomatoes together,and how many variations can we make on this??I am such a country,West Indian New yorker....LOL.
I will make this real soon.

Hmmm on 2nd thought I think I will use a little self rising flour with a egg in it. I don't own a box of bisquit,but I do not want to mess with the textures,and it is not enough to matter on maintainance..just enough to hold it together...mmmmmm!
