OT:Mom's refrigerator pickles. . .
Anyone else craving these? My mom made the best refrigerator pickles. Cucumbers sliced, onions (the sweeter the better), green peppers sliced, all soaked in vinegar and tons of sugar. So I'm thinking since we've got 6 huge cucumber plants looking like they'll all survive the wind. (My hubby always fears the worst and plants plenty in case some don't make it!) So what do I do with them all? I'm thinking about trying the recipe with Splenda??? Any thoughts? I mean we sweeten everything else with it so maybe it will come close to tasting like Mom's? I'll let you know! If I remember right we just kept slicing and adding cucumbers to the jar as it ran low. We kept a big jar in the fridge. Note to self: find a big jar so I'm ready!
Just got a great salsa recipe to use up the tons of tomatos that we'll have in a few weeks. Munching on a fresh apricot as I write! I love this fresh stuff. Corn, asparagus, cherries, soon tomatos, cucumbers and squash. Plan to try a zucchini lasagna as soon as those little buggers start showing up on my porch in "anonymous" bags!

Girl, my mom made the best pickles. I have never made real homemade ones, but I have used the pickle mixes from the store and they are pretty good. You can do the kosher, dill, or sweet.
I also make a mean rotel from tomatos and peppers. My sister has me make her tons of it every single year from her tomatoes. I don't know why she doesn't just get me to give her the recipe. She says, make hot and mild. LOL

I have a great recipe for hot pickled green beans with garlic. Love them...
