OT: High fiber cookies.

Anyone have a good recipe? I love the muffins but Mike is not a muffin eater. (I'll leave that one alone, but I'm fairly sure someone won't be able to) Anyway, I'd like to make a high fiber cookie that he will consume without realizing what he is getting. With all of the pain pills that he has to take for his neuropathy he has a hard time getting "movement." I'll "google" and see what I can find also.

I know of a great recipe for a cookie or you can make "muffin tops" (that might fake out your husband since it is just the best part of the muffin)...... it uses Fiber One cereal as the base ingredient.  The is also a great candy recipe using fiber one and melted chocolate.   FYI - I eat a bowl of fiber one every day....it is the only thing that keeps me regular.  :-)

Here's the catch.......I just moved and all my recipes are still packed.  I will be working in the garage again in a couple days but in the meantime I'm pretty sure you can find it on-line doing a recipe search.  I'll try to search for it too.

I kind of feel like I'm teasing you telling you about a great recipe but then not having it to share but if you can wait a couple of days I will look for it......

I absolutely love Fiber one bars so does Mike! Almost too well. He learned the hard way that one a day does the trick! The chocolate and oatmeals ones yum! But kind of pricey. I'd love the cookie recipe when you find it. I'll check on line too. No rush.

Ruth, do I understand moving! We sold a house, put things in storage for 6 months, built, and are still discovering things 6 months after moving in!!

I don't eat the Fiber One bars.......just the ceral.  I make my own oatmeal type bars.......very healthy, far less sugar and calories.

It's a very shallow "muffin tin" that basically creates what looks like just the muffin top (the flat part).  You can find them at most kitchen stores/departments.  I love them

what about all the sugar that is in the recipes. can rnyers use these recipes?  can you just sub splenda for the sugar?vick

I did not have WLS so I'm not real sure about all the rules that need to be followed.  However as a general rule I eliminate the sugar in just about every recipe......I substitute either apple sauce or some mashed prunes (depending on what the recipe is).  I find most recipes are just too sweet PLUS fiber one does have splenda in it now so it might be sweet enough without adding anything.

FYI - If you substitute with apple sauce you have to reduce some of your other wet ingredients or increase the dry....
