Just tried this recipe I've had forever. It is yummy! I had a large zucchini that I needed to do something with. This was great for breakfast, but would also make a great lunch or dinner side dish.

Zucchini Pie

3 cups quartered and sliced zucchini (I peeled and removed seeds) cut in small pieces

1 cup bisquick or jiffy mix

1/2 cup chopped onion

1/2 cup grated cheese

2 T parsley

1/2 t salt

1/2 t oregano

1/2 cup oil

4 eggs, beaten

garlic to taste

Mix and bake in large pie pan. 350 - 50min

I think you could double it and put in large casserole for a crowd. We really liked it. Served it with salsa and sour cream on the side. Also would be good with chopped red pepper, celery, grated carrots added for color. I also sprinkled a bit of Italian seasoning on top.

That sounds good.  Sorry I was no help with your questions RE: zucchini.  I usually cut it in thick slices, spray it with olive oil flavored cooking spray, sprinkle with seasonings (Italian seasoning, packaged onion soup mix, or whatever I grab from the herb/spice cabinet) and roast in the oven at 400 until tender.  I've also sauteed onion and garlic, thrown in the sliced (unpeeled, unseeded) in the pot, cooked until tender - sometimes I add a can of tomatoes.  George likes this over pasta.  I'm not a big Z fan unless it's the Zephyrs.

Sounds yummy,you do not have to seed and peel...I think peel has vitamins,good ruffage!

I trust you will keep us informed about your surgery, unless I missed your date for which I apologize.  Ya know I'm not around as much as I'd like - darn computer police at work.

B - out - 2 eggs, 2 sausage links, 2 pancakes, grits
Before anybody thinks WTH (what the heck) was she thinking, I ate one sausage, both eggs, 2 tsp. grits, and a bit of pancake.  George finished the grits, and I have pancakes and sausage for another day.  I'm frugal (read cheap) that was the special for $2.99!
S - protein shake
L - still working on the roast, a veggie
S - protein shake
D - probably a hot dog, no bun at the game or the bbq beef plate that has cole slaw and beans - depends on how hungry I am
S - cheese

Debbie,I found out how drag ass my doctor can be,so I expect to have my date by next week,I am rather disappointed in her,but this is no time to switch pitchers.

I did better yesterday than I did the day before  -  from feast to famine LOL.   I am planning my meals today.  It should have been done yesterday, but I'm learning!  Margaret

B. 2 packages of Quaker Oats apple cinnamon oatmeal made with 1% milk

S. few slices of red pepper -  so sweet and crunchy!
L. 2 yogurt plus cherries, peanut butter on a spoon

You can eat more red peppers too,almost no calories.

Had a better appetite today than yesterday.....

Saturday Food........

B:   2/3 cup Oatmeal (my mix of oatmeal, oat bran, mixed seeds, raisins, cranberries).  Topped with walnuts, honey, cinnamon and flaxseed oil.  Hot Tea
S:   Protein Powder (EAS Whey Protein)
L:  2.5 oz Chicken breast and 2 cups shredded cabbage sautéed with onions.  Plain yogurt
S:  Fiber One cereal, ½ apple, Coffee and 2 mini sesame cookies.      
S:   8 almonds (and another protein powder if I'm low on protein for the day)
D:   Chicken kebabs w/ chunks of zucc, tom, peppers, onion,
       1 fajita wrap (whole wheat/carb smart  80 cal)
       Yogurt Sauce (homemade)

S:     Fruit plate, piece or two of dark chocolate (just feel like something sweet today)
