yes Karen you can make any relishes and pickles that you want to with using splenda instead of sugar    they all turn out great. bread and butter pickles or dill of course, relish, and the relish can be made with cuc, ks and with zucchini they either one make great sweet relishes...
rather than make up a lot of zucchinin breads now or a lot of stuff i have ground it up and put it  by cupfuls in bags and froze....this way if i want to make some zucchini bread in January i will get out how many cup fulls i need lol more than one way to skin a cat. (whoops sorry girls) 
I do this with onions, green peppers and several different things. makes cooking so much easier at times. and saves dragging out the food processor ....i just put 5 more bags of tomatoes in the freezer. and made up 10 stuffed green peppers. all wrapped seperatelly then put into a plastic shoe box with the lid so they wont get crushed. ...i love making things like this for future use . i would rather spend all day one day making things than cooking seperate.

Jan, The fridge pickles I made last week with Splenda taste great. That's become a snack that I love. I just wasn't sure about processing the pickles in my canner with Splenda if it still be good when heated that hot.
