muffin recipe wanted - please!
Here is one that I think is very similar to what you were asking for:
Bran Muffins
DUMP THE FOLLOWING INGREDIENTS INTO A LARGE MIXING BOWL IN ANY ORDER DESIRED:
1 CUP OAT BRAN OR WHEAT BRAN
2 CUPS RAISIN BRAN FLAKES
1 CUP RAW OATMEAL
1 CUP WHOLE WHEAT SPELT FLOUR
1/2 CUP RAISINS
1-1/2 CUPS SPLENDA
1/2 CUP CHOPPED WALNUTS
2 EGGS (EGG WHITES ONLY IF DESIRED)
2 CUPS NONFAT MILK or Soy milk
1/3 CUP CANOLA OIL
1/3 CUP LEMON JUICE
3 TEASPOONS CINNAMON
2 TEASPOONS BAKING SODA
3 TEASPOONS VANILLA EXTRACT
3 TEA SPOONS ALMOND EXTRACT (Adam's Best Powdered Extract is best)
12 REYNOLDS FOIL BAKING CUPS
MIX INGREDIENTS TOGETHER THOROUGHLY,
FILL TWELVE-SPACE MUFFIN
PAN LINED WITH REYNOLDS FOIL MUFFIN CUPS
BAKE IN TOP OF 450 DEGREE PRE-HEATED OVEN FOR EXACTLY 12 MINUTES.
MUFFIN CUPS WILL STICK TO MUFFINS IF NOT ALLOWED TO COOL BEFORE EATING.
CAUTION - BE SURE TO USE MUFFIN PAN THAT IS SHALLOW ENOUGH TO LET FOIL MUFFIN CUPS EXTEND SLIGHTLY OVER TOP OF MUFFIN PAN. REFRIGERATE.

Someone posted this recipe a long time ago. I bought everything to make it but never tried them.
Microwave Muffin
1 egg
1/4 cup flaxseed meal
1/2 tsp baking powder
1/2 tsp cinnamon
1 tbls Splenda
1 tbls cream cheese
1 tsp olive oil
Beat egg in 12 oz coffee cup, mix in remaining ingredients, cook 1-2 minutes in microwave, invert cup to dislodge muffin. Can add blueberries, nuts, raisins, oatmeal, etc.
359 cal, 15g protein, 28g fat, 15g carbs, 11g fiber
MOVE’EM OUT MUFFINS (Weight Loss Friendly) Makes 20 Muffins Preheat oven to 400 degrees F. 1st Bowl (dry mix) 1-1/3 cup whole wheat flour ¾ cup oatmeal – not instant 1/6 cup sugar (I used Splenda) 1/6 cup Splenda 1/3 cup Wheat Germ (buy it on the cereal aisle) 4 tsp baking powder 2 Tbsp apple pie spice (or just combine cinnamon, nutmeg & ginger) Add to 1st Bowl (dry mix) ½ cup pecans or walnuts 1 cup raisins (break them up & stir them in) 2 diced apples (with skin is fine) chop fine or grate In Second bowl, mix & mix well: 2 eggs ¾ cup milk 1 container of baby food prunes (you can use applesause if that’s all you have). I steamed dried prunes, then put them in the blender to make my own baby food prunes. Make a well in the middle of the “dry" bowl and pour in the “wet" bowl. Stir until blended, but do not over-stir. Spray muffin tins or cupcake papers with pam. If you don’t use Pam, they will stick as there is no fat in the muffins. Use ice cream scoop to fill muffin tins no more than 2/3 full. Bake 18-21 minutes until done. They will not rise a lot, but they are tasty and have TONS of fiber in them to ‘get things moving’. Contributed by Jane****son Note: I also added diced dates. I also tried using small loaf pans. I had to bake them a little longer, but I really liked the pieces sliced even better than in muffin format.
