Zucchini Brownie recipe
ok- i'm going to post it as she made them sugar and all- and OMG the sugar!!!! i am sure you can change the sugar to splenda and sf powdered....i also would think you could add a scoop of protein powder.
they were cake like -i used a fork not my fingers to eat-but very moist and there was no taste or texture of zucchini!!!!!
Zucchini Brownies
4 eggs
1 1/2 cup vegetable oil
2 cups sugar
2 tsp. baking soda
Beat well; then mix with rest of ingredients.
1 tsp. salt
2 tsp. cinnamon
5 Tbsp cocoa
1 tsp. vanilla
2-3 cups grated zucchini
1 cup chopped nuts
2 cups flour
Bake in a 9 X 13 greased baking pan @ 350 for 20-25 minutes
Chocolate frosting
3 cups powdered sugar
1/3 cup butter or margarine; softened
1 1/2 tsp. vanilla
about 2 Tbsp milk
1/2 cup cocoa
can sprinkle nuts on top

an dthat they were tasy , moist and used zucchini!!!!
i would agree about substituting the applesauce and def would use splenda and not the powdered sugar fro frosting or would use my sf powdered....

Sorry Margo, you're right -- I jumped the gun....
I have used unsweetened applesauce in place of oil, but I'm not sure about substituting the whole 1 1/2 cups......It might need at least 1/4 cup oil for tenderness.
I tweeked a blueberry cake recipe this week and it turned out pretty good....the only thing was it called for 2 cups of all purpose flour and I try to use whole wheat or oat flour whenever I can.
I just like to see the recipes on this board WLS friendly --- after all we are supposed to eat that way. Just my thought.
