OH MY does your food look yummy.  No stove here so we've been eating out and I'm getting tired of it.  I'm out of cottage cheese and lunchmeats.  All the canned foods are up north already, so no tuna or salmon either.  I have two containers of carbmaster yogurt, some cheddar cheese and my protein powder.  I'm going to have cheese for lunch today and a yogurt for a snack.  I've gotten down 32 oz of fluid already, which is a real feat for me.  Did you get your cauliflower crust pizza recipe from eggface?  If not, could you please share it with me.  I miss having pizza, but then I'm only 6 weeks out.

Aloha! I would LOVE the recipe for the cauliflower pizza!! I LOVE cauliflower and can think of lots of good things to put on top!

Here is the original version of the recipe.  To make mine I doubled the recipe but I used only 1/2 the cheese (a total of 1 cup of cheese).  I also added some powdered garlic and basil and added about a heaping tbls of plain bread crumbs to hold it all together.

1 cups grated cooked cauliflower

1 egg

1 cup shredded mozz cheese

Tsp oregano (or more if you like it)

 

Cook and grate cauliflower so you have 1 cups grated.

Put the cooked cauliflower in a bowl.  Add  beaten egg.  Add the cheese and spices, mix them all together.

 

Pack it down onto a lightly greased (or sprayed) baking sheet or pizza pan or a glass pie pan.  Don’t make it too thick…….supposed to be like a pizza crust…

            (fyi-When I double this amount it filled a regular cookies sheet about ¾ of the way for me.  I then covered the empty part of the pan with aluminum foil)


Bake at 450 for about 20 mins…till it browns and feels solid.

 

Take out of oven, let cool about 5 mins then top with thin slices of tomato and sprinkle the rest of the cheese on top of the pie. add whatever you want on top.  Bake or broil for another 5 mins until the cheese melts and browns

 

Bon’ appetite

(FYI – I did only 1/2 the cheese the first time I made it and wished I had used more.  Next time I will do a double recipe and use 1 cup mozz and ½ cup feta and then sprinkle the top with parmesan

It's so good to have you back!

I think you're entitled to nap after major surgery.

After a couple of days fighting the Sugar Devil, I'm doing much better.  Today's plan:

B: cottage cheese & yogurt with raspberries & blueberries
S: iced skinny latte
L: salmon, tomatoes, baba ganoush (eggplant)
S: apple with PB2 dip
D: mustard-sage pork chop, edamame dip
S: frozen cherries

WOOOOOHOOOOOO our Lovely Linda is back!!!!!!

I was gone most all of the weekend. I just now got on OFF and their you were....I could do cartwheels I am so happy!!

I didn't think you would like rehab anymore then I did...however...I did last a little longer then you did. Those places might work for some people but not you or me!!

B-eggs w/cheese,bacon, onions and peppers..yumo!!
L-BBQ ribs and small salad w/veggies
D-chicken pattie and green beans
S-fresh pineapple

You sound more like your cheery self! Hope you're getting enough rest.

I ran out of my protein powder (it will be here tomorrow) and today I've been hungry. I sure see a difference when I don't have enough protein. The carbs tend to sneak back into my day, no matter what.

orowheat sandwich thin w/ ff cr cheese and 2 slices of shaved ham

latte

cottage cheese/pineapple

1/2 pb&j

benefit high fiber bar

latte

Mexican shrimp ****tail

maybe some home made applesauce if it's done cooking in the crock pot before bed.

Hello, Linda and everyone else in my OH family!

A gorgeous day today.  I didnt sleep well last night so I slept in late.  JB and Derek are out next door in the shop rebuilding Derek's dumptruck. i've been studying all afternoon after vacuuming the livning room and entrance levels.

I have my Mind for Success group meeting tonight at 7 pm in the Falls.

B    cottage cheese & unsweetened pineapple

S    1/2 banana and peanut butter

L     Kashi GoLEAN cereal w/skim milk with the other 1/2 banana

S    none

D   salad: chopped lettuce, red onion, tomatoes, cucumber, diced chicken thigh, raisins, dried blueberries, sunflower seeds, pumpkin seeds, walnuts w/ Renee's LIGHT Poppyseed Dressing

Hi Linda and everyone!! Glad to see you back Linda,,and hope  you get better every day!I havent been on cause I have been so busy,,running too and fro. I had the colonoscopy and the doc said he would see me in ten years!! WOOHOO!! But I came away from the experience 7 pounds down,,,after 2 days of liquids only and all that prep! So, Im being extra carefull and drinking more water and even getting exercise in,,,and the scale is still moving!
Saw my PCP tpday,,,all my bloodwork came back nearly perfect,,he was thrilled and so was I!

So heres my menu for today

B- toast w Peanut Butter, coffee
S- 2 oz cheddar
L- Peanut Butter sand on low carb bread
S-??
D-chicken tortilla soup

Hey,,can I have that pizza recipe too?? It looked great!
