Cottage Cheese Pancakes

 Hi all,
George was talking about pancakes, and I thought of my dad's cottage cheese pancakes.
I never got that recipe and it's too late now... 

But I was thinking - back then we didn't have "google" but we do now.  So I found this recipe..
I may have to try it.  What do you all think?  I think it would be pretty good for us, don't you think?
I found some sugar free honey I might try with this..  and maybe splenda instead of sugar

Makes 6 servings
 
From "The Vegetarian Epicure." eggs, cottage cheese, flour, sugar, salt, cinnamon, cream of tartar, strawberries, honey cvt

Ingredients
6 eggs, separated
2 cups small curd low-fat cottage cheese (1016)
2/3 cup flour
2 tbs. sugar
1 tsp. salt
1 dash of cinnamon
1/8 tsp. cream of tartar
1 pint strawberries
1 tbs. honey
Directions
  1. Beat together the egg yolks, cottage cheese, flour, sugar, salt and a sprinkle of cinnamon. 
     
  2. In another bowl, beat the egg whites with the cream of tartar until they are stiff but not dry. 
     
  3. Fold the beaten whites gently into the cheese mixture. 
     
  4. Drop the batter by large spoonfuls onto an oiled griddle or skillet. Fry the pancakes until golden brown on both sides and puffy. (This batter is very delicate, even when set, so make sure that your individual pancakes are no bigger than your spatula so they don't fall apart when you try to flip them.)
     
  5. Serve with fresh sliced strawberries mixed with honey.

 Here is another recipe for cottage cheese pancakes:

Ingredients

    3/4 c cottage cheese
    3/4 c flour
    3/4 c mix of half yogurt, half sour cream (can be all one or the other or any ratio you want)
    3 eggs
    3 t sugar

    1 T butter


Directions

Mix all the ingredients except the butter in a small bowl until blended but lumpy. Melt 1 t butter on a griddle pan and cook 4 pancakes at a time, spreading the batter in a small circle. Cook about 2 minutes per side until lightly browned. Repeat with 1 t butter between each batch of pancakes. 

Makes 12 pancakes (3 servings of 4 cakes each). Great with syrup or sliced fruit, and filling enough to serve as brunch.

Hiya Jeane,I like this recipe! I hail from the east,we call this pancake a crepe',add low/fat,low caloried Cool Whip,and berries of any kind on top,fold like a burrito ,with extra cottage cheese inside,and you have what we call a bintz...yummo!

I have a quick cottage cheese pancake recipe that I love:

1 pkg wt control instant oatmeal any flavor
2 eggs or 1/2 cup egg beaters
1/2 cup cottage cheese

Place all ingredients into a blender and process until smooth.
Cook on a hot griddle as with regular pancakes.

I add sugar free syrup to mine.

 Pat that sounds SOO easy!   I could see doing that (I'm not big on difficult recipes)..

Linda, it sounds like these cottage cheese crepes/pancakes would be less onerous than regular pancakes - and higher protein!

If you want a savory "no potato, potato pancake try this one.These taste remarkably like old fashioned potato pancakes... they are delicious served with a dollop Fage yogurt in place of sour cream or no sugar applesauce, just like the original.

1/2 medium onion, chopped
1 tablespoon butter
1 egg
1/2 cup cottage cheese
2 tablespoons flour
salt
pepper

Saute the onion in the butter until golden and set aside. In a small bowl, beat egg slightly, blend in cottage cheese, flour, salt and pepper, and onion butter mixture. Heat nonstick skillet over medium high heat, spray with Pam, and spread four 1/4 cup scoops of batter into small pancakes. Coo****il surface appears slightly firm and undersides are golden brown... flip and coo****il lightly brown on other side. YUMMY! Heres another easy recipe.
1 cup cottage cheese
1/4 cup of whole wheat flour or whole wheat pancake mix
1 small egg
1 tablespoon Splenda
SF Jam or Jelly (

Slowly add beaten egg to cottage cheese. Add Splenda  and mix. Then add flour while stirring until well blended. add to sprayed pan and make like pancakes.

My neighbor guy just gave me a recipe for zucchini pancakes.....I'll try them and let you all know how they come out.   He says they love them with a dollop of applesauce.

 I am going to have this for breakfast tomorrow or sometime this week - a change from eggs!!

Instead of jam, I will use frozen strawberries...
