Homemade Granola Bars
Duh! that should be 2 tsp vanilla.
Forgot the 1 tsp of vanilla, added to the honey, butter sugar mixture after removing it from the heat.
Here is a really good recipe for homemade granola bars. I will give you the original recipe but it can be altered in many ways to suit your own taste. It does not require baking and they are very easy to make. Add a few scoops of protein powder after toasting the dry ingredients. use any kind of grains, nuts, or fruit that you prefer. You can even add a few tablespoons of pb when making the "glue".
Mix oats, wheat germ, seeds and nuts. Lightly toast in the oven on a cookie sheet or in a fying pan on top of the stove. Keep you eye on this as it only takes about 5 minutes and can burn very quickly.
Mix butter, honey, sugar, salt and peanut butter if you like, in a pot and bring to a simmer. Let cook for a minute or two. Remove from heat and add fruit. Stir into oat mixture, mix well.
Line an 8/11 pan with plastic wrap with enough overhang to pull over and cover the top. Add the warm mixture. Press it all down firmly. Bring the plastic wrap over the top and let it cool at room temp a couple of hours. Remove from pan and peel off plastc wrap. Cut into bars Makes about 16 bars. Wrap individually in plastic wrap and store in the fridge or freezer. These are really good. I've used sesame seeds, ground quinoa, almonds or walnuts instead of peanuts, with and without pb, choc chips, different kinds of fruit. All good. The key is to be sure you have the right proportion of glue to keep the dry ingredients together.
