help on storing eggplant

is there anyway to store eggplant ....i tried storing it frozen and it just turns black and mushy so anyone that is an expert of canning or freezing etc etc  I have an over abundance of them and i love the caseroles made with them....wanted to know is there anyway at all to store them....

Jan, sorry to be so late with this reply.  I'm just now catching up on some posts, haven't been online in over a week.  On the occasions we've had a bumper crop of eggplant, we peeled, cubed, and blanched it before freezing.  It also freezes well completely cooked.  I cook it with ground beef, onion, and garlic, then add the peeled, cubed eggplant, salt and pepper to taste, and sometimes a little dried thyme or whatever suits me at the moment.  Sometimes I cook bacon and add the other ingredients.  George's favorite it eggplant parmesan.  I layer meatless spaghetti sauce with raw eggplant slices, Italian bread crumbs, and cheese, bake covered with foil for about 45 minutes, then bake uncovered until eggplant slices are tender when stuck with a fork or knife point.  I add additional cheese on top and bake until the cheese melts.  This also freezes well.  I've never had eggplant turn black.  There were a couple of times it was a little watery though.
