Recently we saw a episode on Food Network about this guy who developed pancake batter in a can like whipped cream. When I saw it at the grocery store yesterday I decided to give it a go. The 18 oz can was $4.99 and makes approx 28, 4" pancakes. All organic ingredients, too!  The beauty of this product is that you can make one pancake or a dozen, no mixing, no clean up. Amazing.

Now, they're not Krustez or Hungry Jack, as they don't rise quite as much, but they are tasty. The nutritional info is pretty good too:

per serving, 2 pancakes

Cal:  80
Fat:  .5 gr
Carb: 17 gr
fiber:  less than 1 gr
Sugar: 5
Protein: 2

So, I had one pancake with SF syrup and 2 slices of thin, extra crispy bacon for breakfast. Very nice treat, indeed. All I have to clean are the plates and the griddle.

Susan....what a great idea...very cleaver!!

I still don't eat pancakes or any kind of bread, rice or pasta but they do sound good.

Along these lines I saw a "suggestion" that I hadn't thought of. It was to put pancake batter in any kind of a container that you can pour out of. Like a wide mouth ketchup bottle or syrup bottle. Just pour and  not as much of a mess as I usually make.

Not a bad idea at all. How long would it keep in the fridge do you think?

Susan, Just got a reply that I replied to the "do not reply". .  . I do that often! Looks like I'd learn. Pancakes were always a favorite of mine. I could eat 3-4 big ones. . . . Now just a few bites and it seems to expand and just about strangle me! So I don't know how long the batter would keep but I would think a few days.

I checked the expiration date and this can is good until 4/11/10. If it gets close to that time, I'll do what Sybul suggested and cook/freeze them.

Sounds good.  I make a big batch of pancakes for my dh and seperate them into groups of 3 (that's how many he eats at a time) and freeze them.  That way he can eat them for breakfast or a snack whenever he wants.  They microwave really well.

I've started to do a lot of once a week cooking. This idea might get added to the list!  Thanks
