Morning one and all, hope you're Monday is going well so far!

Here's a recipe for today. It's hotter than fresh tar and no one feels like cooking, so this is what I found. The calorie count might be a tad high for some, but I'm sure we'll only be eating 1/2 of a serving, to it's really reasonable. Sure sounds good!


Chicken Waldorf Salad
Perfect as a main dish salad.

Servings: 4

1 medium apple, unpeeled, chopped
2 tablespoons lemon juice
2 cups diced cooked chicken breast
1 cup green seedless grapes, halved
1 celery rib, finely chopped
1/4 cup dried cranberries
1/3 cup toasted walnuts, coarsely chopped

Dressing:
3/4 cup non-fat plain yogurt
1/4 cup low fat mayonnaise (we used Hellmans)
1/4 cup fresh orange juice
1/4 teaspoon kosher salt

Sprinkle the chopped apple with the lemon juice in a large bowl. Add the chicken, grapes, celery, cranberries and walnuts, and lightly combine.

In a small bowl, whisk the yogurt, mayonnaise, orange juice and salt. Gently fold the dressing into the salad. Serve on a bed of mixed salad greens.

Per Serving: 278 Calories; 9g Fat (27.4% calories from fat); 1g Saturated Fat; 33g Protein; 19g Carbohydrate; 2g Dietary Fiber; 69mg Cholesterol; 365mg Sodium. Exchanges: 0 Grain(Starch); 4 Lean Meat; 0 Vegetable; 1/2 Fruit; 1/2 Non-Fat Milk; 1 Fat.

Yesterday was so-so. Gary wanted a sub sandwich so we shared one, but then he went and brought Pringles home!  AGHHH, oh well, I counted the TWO servings I ate and will send the rest of the tube with him to work.

cottage cheese w/ greek yogurt and LF granola
3" of a sub, waaaaaaaaaaaaaaay too many pringles
orzo and chicken salad
watermelon

All in all not a bad day, considering it could have been so much worse!

The munchie**** hard last night. Today it is time to pay the piper for that fiasco.

I had an extra peach, 1/2 cup no sugar added ice cream and a hot dog over the course of the evening.

This morning my innards are in an uproar. Sick Not good on the longest work day of the week.

Because we were on the road most of the day yesterday, my eating was way out of wack....
B - c/m yogurt, SB protein bar
L (11:30) 2 eggs, 1 turkey sausage link, 1 1/2 pc. wheat toast, a little fresh pineapple (which made my tummy hurt)
S - (6:00 p.m.) cheese stick
D (8:30 p.m.) 1/2 turkey sand on hi-fiber bread, 1/3 cup cottage cheese, banana

I was up 1/4 lb this morning because I couldn't take my water pill.
Did get most of my water in.

Too much acid in the pineapple, maybe?  I don't know, every day is an adventure, right?

Looks like a great day in spite of being out and about. I didn't get all my water in yesterday, and that's really unusual for me. I'll try to make up for it today.

i've always loved chix -waldorf salad.thx!!!!!!!

my eating is waaaaay outta whack -as i eluded to in karen's post re 5day pouch test.....
anything that isn't nailed down right now- tho i try to make it all or mostly protein!

this too shall pass....at least i'm not smoking....i truly think it's an oral fixation thing tho with stress.........

I get up every morning determined to both change the world and have one hell of a good time. Sometimes this makes planning my day difficult.

Good morning Susan and everyone....

I used to love Waldorf Salad. I can't eat apples anymore peeled or not....my pouch says NO. I have tried several times...I have finely had to accept the fact. That recipe looks so good!!

I am still paddling as fast as I can.

Yesterday....

B-high protein drink
L-small chef salad
D-pork roast, baby carrots, and onions
S-banana and nuts

  Connie...and Susan...good afternoon....

   I can't eat apple either..they make me dump.  One of the trainers at the gym made an observation one day...he was asking me what I had to do for the hypoglycemia and fruit and I just don't get along. 

   After a few minutes, he said, "you can't eat fruit with seeds !"  That was a WOW moment...I can't eat fruit with seeds or with the skins on.  That little thing makes a big difference!!!!

   Today my tummy is not good..
  so far


 Protein shake, 1/4 banana
 Crackers (8) with cheese
 small salad with chick and cooked carrots, cucumber, black olives..etc

  Later...
  pork, new potatoes and carrots
  crackers and peanut butter (I'm trying the Peter Pan WHipped PB..seems to have less fat and sugar)
  fruit and cottage cheese
  high fiber or high protein cereal with almond milk
  graham cracker with peanut butter

That's a new one on me...the seed thing. Hmmm. Wonder why he said that? Don't all fruits have seeds of some sort?

Apples I"m fine with even with the peelings. . . now grapes more than two and I have instant diarhia. . . Maybe the skins?
