What are you eating? This was in my crock pot yesterday

Good morning one and all,

I was so busy yesterday that I hardly ate at all. I think I need an IV pole next to my nail table! No, seriously. At least I was able to get my fluids in, but only barely hit 900 calories for the day. Not good.  When I got home I did enjoy this from my crock pot. It's easily cut in half, but I'd watch the timing in the crock pot if you do. Less volume= less time

SLOW COOKER SWEET AND TANGY CHICKEN

2 bottles barbecue sauce
1 20 oz can pineapple chunks in juice, NOT drained
1 green pepper, cut into chunks
1 med onion, chunked
2 cloves garlic, minced
8 boneless, skinless chicken thighs.  I used thighs, they just sit better with me

Mix all ingredients, except chicken in a large bowl. Arrange half of th chicken in the bottom of the crock pot, pour half the mixture over, layer the rest of the chicken on top, pour over the rest of the mixture. Cover and cook for 8-9 hours, serve over rice

Cals: 277  fat: 4  Carb: 29  Fiber: 3  sugar: 14  Protein: 30


Here's my yesterday:

Better start english muffin w/ WW cream cheese, 2 slices deli ham
1/2 pb&j
applesauce w/ cottage cheese
1 chicken thigh with some sauce and veggies on basmati rice
applesauce w/ LF granola

I resorted to having a 2% milk decaf latte on the way home just to up my calories. Still didn't help much. Today doesn't look to be much better, so I'm stopping to get some Atkins protein drinks to keep at work.

I'm with you... not doing so well.

1/2 cup cottage cheese w/carb master yogurt
CAN of Campbell's Chunky Soup
hamburger patty w/a slice of swiss cheese

MORNING BUN FROM STARBUCKS
2 short Pike's in tall cups w/ half n half

Did anyone see WATER in there?

The barge has again foundered.  It seems that every time I lose 4 or 5 of the lbs I'm aiming for, the crap creeps back into my diet.  I have to admit that it's not nearly as bad as it was before WLS, but it keeps me from losing more for a week or so until I get back on track.

Sigh.  Today will be a better day.  Or I'll go to bed at 6:30, because almost all the problems for me start about 7 pm.

Put the life raft away.  I'm determined to stay afloat until I reach the barge.  Again.

(Sorry about all the barge references.  I can't seem to help myself....)

Good morning Captain Susan...

The recipe sounds yummy...I too prefer dark meat...I digest it better. I added this to my recipe file...thanks!
However, it sounds like a lot of BBQ sauce for 8 boneless thighs..oh well you know what is best...I will fly with it.

S-salami and cheese and 3 crackers....naughty!! Too much cheese in a day!!

Connie, you're right, it was pretty "soupy", and 1 bottle would probably do it. Let's try it that way

sounds yummo! i prefer dark meat - even the "darker" pork....

maybe the second bottle helps keep it moist? but i would think one should be enough.....

i had to force myself to eat last nite--mornings are never a problem for me tho!!!

I get up every morning determined to both change the world and have one hell of a good time. Sometimes this makes planning my day difficult.

That sounds very good. The pineapple makes is extra inviting.  I'm sure this would work in a cooking bag too. Just not 8 or 9 hours.

B - cottage cheese, berries, Kashi
L - still pondering.
D - roast in the oven, green beans
S - apple

Water is needed, I'm way behind today.

Good afternoon everyone
I am late today.  I had a vision exam this morning and then had to drive to the medical center this afternoon.  Didn't get home until 4:30

Yesterday I had the following:

Breakfast - Sandwich thin with peanut butter
Snack -       Light string chees with Stacy's simply naked pita chips (10)
Lunch -       grilled chicken beast with beets
dinner -       veggie sushi, 1/2 cup rice with tomato sauce FF
Snack -       Protein drink
