One week to go until I go back to work. Hopefully I'll get my drains out today so I can start walking a bit around the neighborhood. It's supposed to be a really pretty week, and it will be so nice to get out!

Susan , I see that you mention applesauce. Do you make your own. I have lots of apples and am going to make some home made . Yum.

There's no recipe, but here's how I make it.
assorted apples: red delicious, granny smith, gala or fuji. Mostly whatever is on sale. Usually 3-4 each.
Peel, core and slice into chunks. Now here's the thing; I like my applesauce really, really chunky and semi soft. So, if you like yours smooth, cut them smaller and cook them longer.
Put all you apple chunks into a pot the size to accomodate the amount, add about 1/2 cup water and a couple of dashes of salt. Bring to a boil, then reduce heat to low, stirring occasionally and test for the texture you're looking for. Mine usually take about 30-40 minutes.
When they're done the way you like, add in Splenda brown sugar blend (usually about 3-4 tbs), Splenda, to taste, then lots of cinnamon, apple pie spice and maybe a little nutmeg.
The last batch I made I threw in a handful of fresh cranberries I had in the freezer from the Holidays. YUMMMMMMM
Now, if you want it smoother, just cook a bit longer and mash the apples with a potato masher.

Susan, How wonderfully easy. The addition of cranberry sounds yummy. I have leftover frozen cranberrys. Also have frozen nuts, think I'll chop a handful, add some to the apple sauce when I eat it.Yummy ..Pecan's sound good.
I do like the chunky applesauce, maybe a bit of ground ginger, Spenda is my go to sweetener.

I have it with cottage cheese as a snack, or in the evenings I sprinkle a little Special K granola on top with some Cool Whip Free. Makes me think I'm eating apple crisp.....it's all in our heads, right?

yesterday was not a good food day...barely broke even calories in, calories out wise :-( today will be better! ^_^
