OT: WLS friendly cheesecake

Oh, this sounds so yummy!  I haven't made it yet, but I will as soon as hubby gets home.  It's got protein from the cottage cheese, almost no sugar, and just a bit of carbs from the fruit and crust.  Enjoy!

(Oh, and the recipe makes 2 pies.  Cut in half for just 1 pie.)

1 12-oz carton of low fat small curd cottage cheese
3 3-oz boxes of sugar free strawberry Jell-O
2 ready made light graham cracker crusts
1 pint fresh strawberries
1 8-oz container of light Cool Whip

Dissolve 2 pkgs of the jell-o using 1 cup boiling water and 1 cup cold water.  Combine cottage cheese and jell-o in a blender and process until smooth.  Pour evenly into 2 crusts and refrigerate until firm.

Meanwhile, wash and slice berries, reserving a few whole berries for garnish.  Arrange sliced berries on top of pies. 

Prepare last package of jell-o with 1 cup boiling water and 1 cup cold water.  Carefully pour gelatin over berries.  Refrigerate pies until gelatin has set completely.  

Top pies with Cool Whip and garnish with whole berries as desired.

(As good as this sounds, I think it would also be delicious using lemon jello and raspberries!  Or peach jell-o and peaches!  Yummo!)

Vickie Rick has the car today and when he gets home I am going to tell him about this and see what he thinks and dam if I won't be going to the store for the ingredents lol just won't get the berries yet...lol OMG I am drooling for this one!!! IF we have the cook out for Memorial day we will have the neighbors to share it with...hell we have the neighbors now....LOL might do it tonight yet...lol

     That sounds soooo good. The lemon and raspberries. Oh my goodness. Heavenly I'm sure.  Can't wait to try it.   Thanks for taking the time to give us recipes. It's so sweet of you.  By the way, If my "almost son", Micheal, and his lovely wife, Ginger, and Oliver (aka Mister O) move to Austin, TX how far away would I be from you. Starting my trip from I-IO. Haven't map-quested it yet. I'm still voting for the Pacific Ocean, But TX is much closer than Indiana.

Mmmmm, I'm with you, Mag.  Lemon base with raspberry topping.  Oh my!

If you come to Austin, that's only 1 short hour from our lakehouse at Canyon Lake!  Oh, do be sure and let me know.  I try to go to Canyon Lake at least once a month.  How great would that be?
