Baked Eggs Recipe
Oh yum! I was looking for an easy but sorta fancy/elegant breakfast for Christmas morning. These are terrific! I tried one this morning and it was yummy. I plan on serving these with fresh fruit and orange juice.
Baked Eggs
6 whole eggs
6 rounds of whole wheat bread
6 Tbs of half n half
6 Tbs of grated cheese
6 Tbs of bacon bits (or ham)
Butter
Seasoning to taste
Prep: Preheat oven to 350 degrees. Boil a kettle full of water while assembling the eggs. Chop sliced bacon into bits and fry until crisp; drain on paper towel. Use a biscuit cutter to cut out 6 rounds of bread.
Assemble: Butter the inside of 6 ramekins or individual baking dishes. Lightly butter the bread and place one round in the bottom of each ramekin. Crack one egg into each dish on top of the bread. Add 1 tablespoon of light cream to each egg. Sprinkle with your choice of seasonings (salt, pepper, seasoned salt, etc.) Top with cheese and bacon bits or little bits of chopped ham.
Bake: Place ramekins in a shallow pan and fill pan halfway with boiling water. Bake for 15 minutes. Egg yolks will be set but still soft at this point. If you like a firmer yolk, cook another minute or two longer.
